Cheap caribbean vacation for week before Christmas?

When I get on the websites, they advertise a price, but as soon as I enter my details (travel dates, etc.) the price quadruples. What am I doing wrong? I am willing to fly back on Christmas Eve or Christmas Day — I thought this would make it cheaper but perhaps I am wrong? What dates would make it come up as the advertised price? I can be flexible (leaving anywhere between December 16th and 20th, coming back anywhere between 20th and 25th). Which dates/destinations would give me the best deals? Also, any recommendations as to specific destinations? Or places to book other than the websites that I have had the above mentioned problems with? I just want it to be simple! Thanks
Well, when do you have to return by for it to be considered ‘before Christmas.’ ? I have tried the 23rd, 24th, and 25th, but prices are equally high on all 3 days
